Pasta with Chicken and Mushrooms

A comforting dish of penne pasta tossed with tender sautéed chicken bites and mushrooms in a rich, creamy sauce, finished with a generous sprinkle of grated Parmigiano and fresh parsley.

Ingredients

2 chicken breasts cut into cubes
500 g shredded oyster mushrooms
1/2 cup 35% cream
450 grams pasta (penne or fettuccini)
grated parmigiano reggiano or pecorino
5-6 tablespoons olive oil
salt to taste
black pepper to taste
splash of cooking spirit or white wine
7-8 fresh sage leaves

What You’ll Need

large to boil pasta
large frying pan

Method, step by step

1

Step 1

Begin by heating the olive oil in a large skillet or frying pan. Add the cubed chicken and sear on medium high heat. The chicken does not have to cook through but its important to try and develop some browning. Remove chicken and set aside.

2

Step 2

If you have not done so, shred the mushrooms. Simply tear them into thinner strips. Add and heat another tablespoon of olive oil and the shredded oyster mushrooms. Cook until they are softened and most of the water released by the mushrooms has evaporated. Return the chicken to the pan and mix well with the mushrooms. Season with salt and black pepper.

3

Step 3

In the meantime, bring a large pot of water to a boil. Once it boils add salt. Cook the fettuccine according to packaging instructions or al dente. Try to keep it more al dente since it will finish cooking when combined in the pan with the other ingredients.

4

Step 4

Add a splash of cooking spirit you like to use to the mushrooms/chicken and cook until it evaporates. This should take another 5 minutes or so. Toss in the sage. Also, by this point the chicken bites should be cooked. To be sure cut one open. If necessary, cook for a few more minutes.

5

Step 5

Just before the pasta is cooked, add the cream to the mushrooms. Continue cooking to allow the cream to heat up and thicken a little bit. Stir well to combine all ingredients.

6

Step 6

Finally, drain the pasta and add to pan and stir to combine the ingredients. Serve with some freshly grated cheese (whichever you prefer to use).

Fired Up Flavours Tips

Chicken thighs have much more flavour than chicken breast.
Oyster mushrooms have a luxurious elegant flavour. You can decide to use only one variety of mushrooms or use a medley.
This next tip was shared with me by a chef in Italy. Basically, grind some porcini mushrooms into a powder and sprinkle it on the mushrooms and chicken while they are cooking.

Why You’ll Love This Dish

You or your guests will enjoy this elegant and comforting meal because it offers a wonderfully creamy, savoury combination of flavours and textures. The tender chicken makes it satisfying, while the sautéed mushrooms add an earthy richness.

About This Dish

This is a rich and comforting pasta dish that combines tender sautéed chicken bites with earthy mushrooms and a smooth, creamy sauce. The mushrooms add a savoury, almost meaty depth, while the chicken makes the dish hearty and satisfying.  Parmesan cheese adds a salty, nutty finish, and the fresh parsley provides a touch of brightness that balances the richness of the cream.

Overall, it’s the kind of warm, indulgent Italian-inspired pasta that feels both rustic and elegant—perfect for a cozy family dinner or a special meal.

About the wine pairing!
An oak-aged Chardonnay pairs well with chicken and mushroom pasta in heavy cream sauce because its full-bodied, buttery texture mirrors the richness of the cream, while its oak-derived notes elevate the earthy mushrooms.  With this dish, the weight and flavours of both the wine and the food are intensely matched to create a luxurious dining experience.  While an oak aged Chardonnay may feel full and heavy, a well-made selection still retains enough underlying citrus and green apple acidity to gently cut through the fat of the cream, ensuring your palate doesn’t feel overwhelmed or weighed down.  When purchasing a wine be sure to investigate an select a quality oak aged Chardonnay.
